What actually goes into a Secret Kiwi Kitchen mix?
We had a simple rule from day one: every ingredient we use has to be something a Kiwi mum would reach for in her own pantry. Not something you'd need a chemistry degree to pronounce. Just real food, the kind New Zealand families have been cooking with for generations.
Most baking mixes on supermarket shelves don't want you to look too closely at the ingredients list. We're the opposite. We built Secret Kiwi Kitchen because we were tired of seeing cheap dairy, artificial flavourings, and colourings masquerading as food. So we went back to basics, real ingredients, from places we're proud of, with nothing to hide.
Our award-winning artisan mixes are crafted in New Zealand in small batches, carefully selecting local and imported ingredients. Here's what actually goes into our mixes:
New Zealand Dairy — the heart of everything
This is where it starts. And honestly, this is where most other mixes fall short.
We use real New Zealand buttermilk powder and whole milk powder, sourced from the pristine West Coast of the South Island, and from the Waikato, the lush green heartland of New Zealand dairy farming.
Here's what makes NZ dairy genuinely different:
- Grass-fed, year-round: our cows graze on pasture 365 days a year. Not as a marketing claim. Just because that's how farming works here.
- Hormone-free by law: New Zealand prohibits synthetic growth hormones in dairy cattle. Full stop.
- Antibiotic-free: confirmed by our suppliers and independently verified.
- MPI certified: New Zealand's Ministry for Primary Industries runs some of the most rigorous food safety audits in the world.
- If you've ever wondered why our pancakes taste richer, our scones more tender, or our cakes more creamy, it's the dairy. Real NZ grass-fed dairy does things that cheap overseas milk powder simply cannot.
NZ-milled flour and why it's not like American flour
Our flour is milled in New Zealand's North Island, from premium Australian wheat. Professional bakers' grade, non-GMO verified, with full documented traceability.
But here's something worth knowing, especially if you're in the USA.
A lot of commercial flour used in American baking contains things that are banned in most of the rest of the world:
- Potassium bromate: a chemical used to strengthen dough, classified as a possible carcinogen, banned in the EU, UK, Australia, New Zealand and Canada. Still legal in the US.
- Bleaching agents: chlorine or benzoyl peroxide are used to whiten flour artificially. Also banned in the EU and NZ.
- Azodicarbonamide: a dough conditioner that's also used in the manufacture of yoga mats. Banned across Europe and Australasia.
Our flour contains none of these. Just clean, professional-grade wheat flour with nothing added except a trace of folic acid, a standard New Zealand fortification requirement. When you bake with a Secret Kiwi Kitchen mix, you're not getting any of that.
Real Bourbon Vanilla Beans
We use genuine Bourbon vanilla from Madagascar and Papua New Guinea, the most prized variety in the world. Rich, creamy, complex. Never synthetic vanillin, never "natural flavouring" that's anything but. Real vanilla bean, ground from whole Bourbon pods.
Marlborough Sea Salt
Our salt comes from Lake Grassmere in Marlborough, at the top of New Zealand's South Island, one of the most pristine coastal environments in the world. Ocean water flows into solar salt fields where it's evaporated naturally by sun and wind over an entire summer, then carefully harvested.
Here's what makes it special:
- Solar evaporated: sun and wind only, no artificial processing
- Mineral-rich: higher levels of calcium, magnesium, and potassium than ordinary table salt, naturally present from the seawater.
- Bio-Gro NZ certified: organic input certified by Bio-Gro NZ, an IFOAM accredited certifier — New Zealand's most trusted organic certification body
- Halal and Kosher certified
Most people never think about the salt in their baking mix. We do.
Chelsea Caster Sugar
We use Chelsea caster sugar, refined on the shores of the Waitematā Harbour in Birkenhead, Auckland, by New Zealand's only sugar refinery. Chelsea has been running continuously since 1884, 24 hours a day, without stopping, for over 140 years. It's a Category 1 New Zealand Historic Place, the same status as our most treasured national landmarks. The same pure cane sugar, refined with the same care and craft, in the same buildings, that New Zealand families have been baking with for generations.
Unlike many conventional sugar refineries — including most in the US — that still use bone char filtration, Chelsea uses activated carbon filtration instead. That means our sugar is suitable for vegetarians, and is produced at one of the world's most sustainably operated refineries.
Malt Extract: the baker's secret
If you've ever wondered why our Buttermilk Pancake & Waffle Mix produces pancakes with that slightly deeper, more complex flavour than anything else you've tried from a packet, malt extract is part of the answer.
We use a traditional Australian malt extract, made from 100% Australian malted barley using a time-honoured hot water extraction process. It's the same ingredient that artisan bakers and craft brewers have relied on for generations, a natural sweetener that adds warmth, depth, and that characteristic golden colour without a single artificial shortcut.
Dutch-Processed Cocoa
For our chocolate mixes, we source cocoa from West African and Indonesian origin beans, processed by one of the world's leading sustainable cocoa operators, independently audited by DNV GL, and Halal- and Kosher-certified. The difference shows up in the brownie. Deep, genuinely chocolatey, with the kind of richness that actually tastes like chocolate.
GMO-Free Eggs
- Our egg powder is pasteurised, spray-dried, and rigorously tested.
- GMO-free: certified annually in compliance with EU regulations
- Tested twice yearly for pesticides, antibiotics, heavy metals and mycotoxins
- Not treated with radiation
- Kosher, Halal, BRC, and ISO 9001 certified
- No gluten, no dairy, no soy, no nuts
What We Leave Out:
- Preservatives
- Artificial colours
- Artificial flavours (except where noted in our transparency section below)
- Bromates, bleaches, or dough conditioners (chemicals legal in US commercial flour, but banned in New Zealand)
- Synthetic growth hormones or antibiotics in our dairy
- GMOs in our dairy and eggs
The only things in our mixes that sound remotely scientific are baking soda and baking powder — the same ingredients that have been in home bakers' pantries for generations. Everything else you'd recognise standing in your kitchen.
A Note on Transparency
We think you deserve the full picture, not just the parts that sound good.
A small number of our mixes contain compound chocolate chips (White Choc Blondie, Triple Fudge Brownie, and Choc Chip), which include natural flavouring compounds. Something you'd find in most premium chocolate chips in your pantry.
Our molasses powder, used in small quantities in our Blondie and Gingerbread mixes, contains maltodextrin, which may be sourced from conventional corn. We are actively seeking a certified non-GMO alternative and will update this when we do.
Our maize starch is sourced from New Zealand and Romania. We are currently seeking formal non-GMO verification from our supplier and will update this page when confirmed.
We'll always tell you what's in the bag, the good stuff and the honest caveats, because that's the only kind of clean label worth having.
The Reason it Matters
New Zealand has built a global reputation for food integrity, clean land, clean water, rigorous regulation, and farmers who genuinely care about what they produce. We think that reputation is worth protecting.
We also think you deserve to know exactly what you're baking with and feeding your family. No vague claims. No hidden nasties. Just real food, made properly, from a country that takes that seriously.
