At Secret Kiwi Kitchen, we believe a cake mix should be more than just a shortcut — it should be a canvas. Our Vanilla Universal Cake Mix is light, fluffy, and endlessly adaptable. With just a few simple twists, you can create bakes that feel completely new, every single time.
Here are seven of our favourite ways to make our vanilla cake mix shine.
1. Extra Fluffy Vanilla Sponge 🍰
Want your sponge to feel like a cloud? Whip one or two egg whites until soft peaks form and gently fold them into the batter. The result is an extra airy, bakery-style sponge that’s perfect for birthdays, gatherings, or simply because.

2. Matcha Swirl Cake 🍵
For a subtle earthy note and a gorgeous green ripple, swirl a teaspoon of matcha powder into half the batter. Alternate layers of vanilla and matcha in your tin, then bake for a marble effect that looks as striking as it tastes.

3. Cinnamon Loaf 🌿
Transform the mix into a cosy loaf by folding in a teaspoon of ground cinnamon (and even a sprinkle of nutmeg if you like). Sprinkle cinnamon sugar over the top before baking for a warming, spiced finish. For an added visual bonus and an extra kick, layer in a layer of cinnamon 1/2 through the cake. Lovely sliced thick with a cup of tea.

4. Banana Choc Chip Muffins 🍌🍫
Our mix doubles beautifully as a muffin base. Mash two ripe bananas and fold them through with a handful of chocolate chips. Bake in muffin tins and you’ve got moist, moreish muffins that freeze well and make brilliant lunchbox fillers.

5. Quick Lemon Poppy Seed Bread 🍋
Grate the zest of one lemon into the mix and fold in two teaspoons of poppy seeds. Once baked, drizzle with a simple lemon glaze (icing sugar + lemon juice) for a bright, fresh loaf that comes together in minutes.

6. Easy Upside-Down Cakes 🍍🍑
Line the bottom of your cake tin with your favourite fruit: pineapple slices or peach halves, sliced citrus and drizzle with a little butter and brown sugar, then pour over the vanilla batter. Bake, flip, and reveal a beautiful upside-down cake that looks far more complicated than it really is.

7. Apple Crisp Shortcut 🍏
This version makes use of our Vanilla Universal Cake Mix to create a golden, buttery topping with just the right amount of crunch.
Ingredients
-
5–6 medium apples, peeled and sliced
-
1 tsp cinnamon
-
1 tsp lemon juice
-
2 Tbsp sugar (optional, depending on how sweet your apples are)
-
1 cup Secret Kiwi Kitchen Vanilla Universal Cake Mix
-
½ cup rolled oats
-
½ cup brown sugar
-
½ cup cold butter, cubed
Method
-
Preheat oven to 180°C (350°F). Grease a medium baking dish.
-
Toss the apples with cinnamon, lemon juice, and sugar. Spread evenly in the dish.
-
In another bowl, mix the cake mix, oats, and brown sugar. Rub in the butter with your fingertips until it forms a crumbly texture.
-
Sprinkle the crumble topping evenly over the apples.
-
Bake for 35–40 minutes, until the apples are tender and the topping is golden brown.
-
Serve warm with vanilla ice cream or whipped cream.
✨ Tip: Add ½ cup chopped nuts (pecans or walnuts) to the topping for extra crunch.
