Buttermilk Scone Mix

Preheat oven to 220°C (425°F) or 200°C (400°F) fan-forced.
In a bowl, add 75g (1/2 cup) cold butter (cubed) and the contents of this pack. Rub butter into the mix lightly with your fingertips until crumbly.
Add 3/4 to 1 cup cold water and mix gently to a soft dough. For richer scones, add 1 egg (optional) and reduce water to 1/2 cup.
On a floured surface, pat and shape dough to 2-2.5cm thick and cut rounds with a 6cm cutter (or shape free-form to keep rustic).
Place on a lined tray — close together for soft sides, or spaced apart for crisper edges.
Bake 15-20 minutes until risen and golden. Serve warm, plain or with your favourite toppings.
Optional add-ins: spices (cinnamon, nutmeg), dried fruit (raisins, currants), fresh or candied ginger, chocolate chips.
Storage: keep in an airtight container up to 2 days, or freeze up to 1 month. Defrost at room temperature or warm gently before serving.
