Method

1. Whisk the pancake mix with water, ricotta, lemon rind and juice until smooth.
2. Pour into a lined cake tin.
3. Dollop lemon curd on top and swirl gently.
4. Bake at 180°C for about 30 minutes until set; cover with foil if browning too fast.
5. Dust with icing sugar and serve with cream or ice cream.
