Sensational Seeded Seed Cracker Mix
Preheat oven to 150°C / 300°F fan bake, or 160°C / 320°F conventional.
Add from your pantry:
1 cup boiling water
3 tablespoons vegetable oil (e.g. olive or coconut)
Optional: extra sprinkle of flaky sea salt or chilli powder
Prepare the mixture: In a bowl, combine the dry mix with 1 cup boiling water and 3 tablespoons oil. Let it rest for 15 minutes to thicken.
Divide and shape: Divide the thickened mix in half. Place each portion on a lined tray. Cover with another sheet of baking paper and roll thinly and as evenly as possible.
Bake: Sprinkle with extra salt if desired. Bake for 45-55 minutes until golden and crisp.
To cut cracker shapes (optional): After 15 minutes of baking, remove the trays and cut into squares or shapes. Return to oven for another 30-40 minutes.
Cool: Let cool, snap into pieces, and keep in an airtight container — they'll stay crisp for up to a week. For longer storage, freeze for up to 3-4 months.
