Rose Petal, Saffron & Orange-Blossom Baklava

Delicately layered filo pastry filled with premium nuts and infused with saffron, finished with a fragrant orange-blossom syrup and a scatter of our dried rose petals.

You'll add

Filo pastry, mixed nuts, honey, butter, saffron, orange-blossom & rose water

Method

  1. Preheat oven to 180°C and grease a 23cm square tin.
  2. Process the nuts until finely chopped, then mix with the sugar and spices.
  3. Butter a filo sheet and layer three buttered sheets into the tin, folding the edges in, then sprinkle over some of the nut mixture.
  4. Add three more buttered filo layers on top.
  5. Repeat the layering with the remaining filo and nuts, finishing with a filo layer.
  6. Score into diamond shapes right through to the base with a sharp knife.
  7. Bake for 35–40 minutes until golden.
  8. Meanwhile, heat the honey, 1/2 cup water and sugar until the sugar dissolves.
  9. Simmer until slightly thickened, then take off the heat and stir in the rose water, orange-blossom water and saffron.
  10. Pour the syrup over the hot baklava and let it cool completely. Scatter with dried rose petals to serve.
