Vanilla Cake & Cupcake Mix
Add from your pantry:
2 eggs
1/2 cup vegetable oil or butter
1 cup boiling water (1 1/2 cups for cupcakes)
1-2 teaspoons vanilla extract (optional)
Flavouring of choice (optional)
Preheat the oven to 180°C/350°F.
Prepare a 20cm (8 inch) cake pan by lining with baking paper. In a large bowl, add contents of the mix, eggs, oil (or butter), and water. Mix well for 1-2 minutes until lumps dissolve.
Pour the batter into the cake tin and bake for 27-32 minutes, or until a toothpick or knife comes out clean when you test the centre. Remove from oven and leave in pan for 10 minutes. Let cool completely before icing.
