What actually goes into a Secret Kiwi Kitchen mix?
Real food — the kind New Zealand families have baked with for generations. Nothing you'd need a chemistry degree to pronounce.
We had a simple rule from day one: every ingredient we use has to be something a Kiwi mum would reach for in her own pantry. Just real food, the kind New Zealand families have been cooking with for generations.
Most baking mixes on supermarket shelves don't want you to look too closely at the ingredients list. We're the opposite. We were tired of cheap dairy, artificial flavourings and colourings masquerading as food — so we went back to basics: real ingredients, from places we're proud of, with nothing to hide.
Our award-winning artisan mixes are crafted in New Zealand in small batches, carefully selecting local and imported ingredients.
Here's what actually goes into our mixes.
New Zealand Dairy
West Coast & WaikatoThe heart of everything — and where most other mixes fall short. We use real NZ buttermilk and whole milk powder from the pristine South Island West Coast and the lush Waikato. It's why our pancakes taste richer, our scones more tender, our cakes more creamy.
NZ-Milled Flour
North Island · premium wheatProfessional bakers'-grade flour, milled in New Zealand from premium wheat with full traceability. None of the potassium bromate, bleaching agents or azodicarbonamide still legal in US commercial flour but banned across the EU, UK, Australia and NZ. Just clean flour, nothing added.
Real Bourbon Vanilla
Madagascar & Papua New GuineaGenuine Bourbon vanilla — the most prized variety in the world — ground from whole pods. Rich, creamy and complex. Never synthetic vanillin, never vague "natural flavouring" that's anything but.
Marlborough Sea Salt
Lake GrassmereHarvested from one of the world's most pristine coastal environments, where seawater is evaporated naturally by sun and wind over an entire summer. Naturally higher in calcium, magnesium and potassium than ordinary table salt. Most people never think about the salt in their mix. We do.
Chelsea Caster Sugar
Birkenhead, Auckland · since 1884Refined on the shores of the Waitematā Harbour by New Zealand's only sugar refinery — running continuously for over 140 years, a Category 1 Historic Place. Unlike most refineries (including many in the US) that use bone-char filtration, Chelsea uses activated carbon, so our sugar is suitable for vegetarians.
Malt Extract
Australia · 100% malted barleyThe baker's secret behind that deeper, more complex flavour in our Buttermilk Pancake & Waffle Mix. A traditional malt extract made by a time-honoured hot-water extraction — the same ingredient artisan bakers and craft brewers have relied on for generations. Warmth, depth and a golden colour, no artificial shortcut.
Dutch-Processed Cocoa
West Africa & IndonesiaFor our chocolate mixes, cocoa processed by one of the world's leading sustainable operators and independently audited. The difference shows up in the brownie: deep, genuinely chocolatey, with the kind of richness that actually tastes like chocolate.
GMO-Free Eggs
Pasteurised & spray-driedRigorously tested egg powder, certified GMO-free annually to EU regulations and tested twice yearly for pesticides, antibiotics, heavy metals and mycotoxins. Never treated with radiation.
What we leave out

- GMOs in our dairy & eggs
The only things in our mixes that sound remotely scientific are baking soda and baking powder — the same staples that have been in home bakers' pantries for generations. Everything else you'd recognise standing in your own kitchen.
A note on transparency
We think you deserve the full picture — not just the parts that sound good.
A small number of our mixes contain compound chocolate chips (White Choc Blondie, Triple Fudge Brownie and Choc Chip), which include natural flavouring compounds — something you'd find in most premium chocolate chips.
Our molasses powder, used in small quantities in the Blondie and Gingerbread mixes, contains maltodextrin that may be sourced from conventional corn. We're actively seeking a certified non-GMO alternative. Our maize starch (from NZ and Romania) is also awaiting formal non-GMO verification — we'll update this page when confirmed.
We'll always tell you what's in the bag — the good stuff and the honest caveats — because that's the only kind of clean label worth having.
The reason it matters
New Zealand has built a global reputation for food integrity: clean land, clean water, rigorous regulation, and farmers who genuinely care about what they produce. We think that reputation is worth protecting — and that you deserve to know exactly what you're baking with and feeding your family.
No vague claims. No hidden nasties. Just real food, made properly, from a country that takes that seriously.
