Our Ginger Crunch Slice Mix captures everything that makes this nostalgic favourite so irresistible. A rich, buttery shortbread-style base is topped with a smooth, glossy ginger icing that delivers the perfect balance of sweetness and warming spice. Made with real ground ginger and no artificial flavours, it's comfort baking at its very best.

Simply add butter to create the buttery base, then melt the included icing mix with butter for the signature glossy ginger topping. Easy to make, impossible to resist.

Baking Instructions

Preheat oven to 180°C (350°F). Line with baking paper or grease a 20 x 20 cm (8 x 8 in) tin.

Base:
- In a bowl, empty slice mix (remove icing sachet).
- Stir in 200g (3/4 cup + 2 Tbsp) melted butter and mix well.
- Press firmly and evenly into tin.
- Bake 25-30 min, until lightly golden. Let cool while making icing.

Icing:
- In a saucepan, melt 100g (7 Tbsp) butter with icing mix.
- Optional: add 1-3 Tbsp golden syrup or honey for a softer, smoother top.
- Stir constantly until smooth (a whisk works well), then pour over base. While warm, sprinkle with candied ginger or nuts (optional). Cool completely before slicing.

Makes 12 large or 16 smaller slices. Use a 20x20cm square tin lined with baking paper.
