Crispy edges, a gooey middle, and a nutty depth from browned butter and tahini — baked in a cast-iron skillet.

Method

  1. Brown the butter over medium heat until golden and nutty, then cool slightly.
  2. Make the blondie mix as directed, using the browned butter in place of regular butter.
  3. Loosen the tahini with a little hot water and stir it through the batter.
  4. Fold in the dark chocolate chunks.
  5. Bake at 180°C in a cast-iron skillet, checking a few minutes early.
  6. Cool a little, then serve with vanilla ice cream.
